Szechuan berry is part of the Zanthoxylum piperitum family, so it’s not actually a pepper. Originating from one of the mountainous regions of central China, this berry is obtained after drying and extracting the sheath that surrounds the fruits of the Sichuan pepper plant. It resembles all berries from the same family, and is characterized by a citrus taste. There are two types of Szechuan berries, green and red. As for the red Szechuan berry, it is harvested at full maturity when the pod is opened. Its taste is subtle and very rich, slightly woody, floral, spicy, strongly reminiscent of lemon.
